For those who think a New York breakfast of bagels and lox can be a religious experience, this Lower East Side institution is a high church — or rather, synagogue. If you can't ogle the cases in person, you can order the favorite of fish-with-coffee die-hards."

Oliver Sacks writes about herring at Russ & Daughters in The New Yorker's "Talk of the Town" section. Sacks notes, "The great traditions of herring are maintained by Russ & Daughters, a Houston Street emporium that started as a pushcart on the Lower East Side, nearly a century ago, and still sells the largest variety of herring in New York City. It was Russ & Daughters that organized the recent herring festival." Sacks also discusses the New Catch Holland Herring and other herring varieties at Russ & Daughters in the article titled, "Fish Tales: Clupeophilia."

Gourmet Magazine

Gourmet Magazine

June 18, 2009

In Gourmet Magazine's newsletter, Editor in Chief Ruth Reichl recalls herring's special meaning in her family, and she talks specifically about the brief, yet prized, New Catch Holland Herring season. "My father claimed that my mother seduced him with herring—and then never served it again. He loved that fish, and he waited eagerly each year for the New Catch Holland Herring to arrive. If you think about the delicate flavor of sashimi compared with cooked fish, you get some idea of the New Catch's subtlety. The taste is both sweet and briny, and the texture has a remarkably tender, almost buttery quality. The season will be over in a couple of weeks, but you can order New Catch now from Russ & Daughters. If Dad were still around, I know exactly what I'd be getting him for Father's Day." — Ruth Reich

New York Magazine

New York Magazine

June 15, 2009

Rob Patronite and Robin Raisfeld write: "IN SEASON: NEW CATCH HOLLAND HERRING - The best way to eat a New Catch Holland Herring is as soon as possible—at the point of purchase, even. If you’re so inclined, no one will stop you from doing so at the Russ & Daughters counter. There is a technique, however. According to co-owner Joshua Russ Tupper, the way to do it is to (1) chop up some white onion, (2) grab the attached herring fillets by the tail, and roll them around in the onion. Tilt your head back, and (3) basically lower the fish into your mouth like a Hanna-Barbera cartoon cat."

Russ & Daughters is not a mere seller of 'appetizers,' as Joel Russ's sign has proclaimed ever since he founded his business in 1914. It is New York's most hallowed shrine to the miracle of caviar, smoked salmon, ethereal herring and silken chopped liver."
